Sweet Potato Delight

This is the perfect compliment to Thanksgiving and Christmas dinner.

Ingredients

  • 3 cups cooked mashed sweet potatoes
  • 1/3 cup of Hot Jalapeno Ketchup
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/3 cup of butter
  • 1 tablespoon vanilla
  • 1 tsp. cinnamon
  • 2 eggs, beaten

Mix all of the above ingredients and spread evenly in a 8X12" glass pan. Then, mix the following and sprinkle on top of the sweet potato mixture.

  • 1 cup flaked coconut
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup oleo
  • 1 cup pecans

Preheat oven to 375 degrees and bake about 25 minutes.
